Yum!! These are absolutely delicious-such a treat. They takes some time but I found a flawless recipe from a peta pamphlet at a health food store in Utah. We ended up doubling the recipe and storing the extra batter in the fridge and had fresh pancakes everyday for a week. They were light, fluffy and delicious.
Ingredients:
2 cups flour
3 tbsp sugar
3 tbsp baking powder
1 tsp salt
3 tbsp oil
2 cups soymilk
1/2 cup fresh or frozen blueberries
Preperation:
Mix all the "dry" ingredients together in a large bowl (flour, sugar, baking powder and salt). Add the soymilk and oil and mix until smooth. Then add in the blueberries and stir.
I use a soup ladle to drop the batter into a hot greased pan for nice big pancakes. Cooks between 3-5 minutes on each side. It took me a while to get my flipping under control but now I am a pro.

30 day-everyday
I decided to challenge myself for 30 days to see if I could go without dairy products. I have been a long time vegetarian but I loved my cheese and desserts and was somehow able to overlook the process in which they were produced. I went 30 days and felt amazing, I lost weight, had amazing energy levels, clear thoughts, clear skin...so I kept on going for 2 years!
My (ex)boyfriend who was the reason for my fall back into dairy decided that when we were living together in Italy he would try to be vegan for 30 days. Let me side step to our first date when he made soooo much fun of me for not eating dairy. So he went 30 days and felt amazing, I think he had meat twice after that and now he has been a vegetarian for over a year.
I think anyone who decides to challenge themselves for 30 days will notice amazing results, but then after that it becomes an everyday challenge to maintain a healthy and balanced vegan diet.
I am devoting this blog to my daily challenges as I try to stay vegan and not give in to the temptations of any animal products.
